S’more Chocolate Pie Recipe to celebrate National S’Mores Day

August 10 is National S’mores Day, which gives another reason to indulge in the quintessential campfire dessert.  In honor of the day dedicated to the s’more, Globe Life Park in Arlington, home to the Texas Rangers, is sharing its spin of choice on the classic treat, proving that there is not just one way to enjoy the graham-chocolate-mallow combination.

At Globe Life Park, the s’mores spin of choice is a S’more Chocolate Pie.  With a Graham Cracker Crust, Chocolate Brownie Cake and toasted Marshmallow Foam, it’s a s’mores-inspired treat that is sure to be a home run!

Graham Cracker Crust:
8oz graham cracker crumbs
2oz melted butter
2oz brown sugar
½ tbs ground cinnamon

Mix all ingredients and make a crust in a half sheet pan.

 

Chocolate Brownie Cake:
1 quart heavy cream
2 cups milk
2.5 lbs melted chocolate chips
¼ cup sugar
1 tsp salt
8 eggs

Combine milk and heavy cream in a sauce pan and
heat, melt the chocolate chips in a Bain Marie, and
then add the milk and heavy cream to the melted
chocolate. Mix until smooth. Take off of the heat, add
the salt and the eggs, beat lightly then poor the mix
on the premade graham cracker shell and bake for 22
to 30 minutes until firm. Let it chill then cut it in 2×2
squares and set aside.

Marshmallow Foam:
½ cup egg whites
1 pinch of salt
1 tsp vanilla extract
4 cups marshmallow foam
1 tsp meringue powder
½ cup powder sugar

Beat the egg whites until they peak. Add the rest of
the ingredients and mix for a few seconds. This recipe
will top 6 to 8 s’mores depending on how big you
desire to make them.
